This was handed down to me a few Christmas's ago and are a perfect treat if you want to enjoy the wonderful taste of chocolate and bourbon all in one bite.
I know the Holidays are over but the Super Bowl is coming and this is a great way to use up some of that leftover Holiday Booze.
Bourbon Balls
Ingredients
3c Nilla Vanilla Wafers ( or Cheap off brand )
1/2 Cup very finely chopped Pecans
1/2 cup unsweetened Cocoa
2c Confectioner's Sugar
1/2 cup or more Makers Mark ( or the bourbon of choice )
3 Tbs. Karo light Corn Syrup
A Little Salt to taste
Throw the wafers in a blender. One box should get you three cups worth ground. Then combine with the nuts, cocoa, 1 cup of the sugar, bourbon, corn syrup and a little salt.
After you mix these roll into balls.Don't go as big as golf balls but go bigger than marbles.
Once you have your balls roll them in remaining sugar and leave in fridge overnight preferably in airtight container.
Take them out and enjoy...but not too much because these babys can be pretty pontent. Also make sure you keep the little ones out of them !
Happy New Year, Joe
